Every gram of our Date Palm Jaggery starts with sap from khejur trees in Murshidabad, West Bengal — collected during the winter season, cooked the same day and packed with close control over the process.

Why Murshidabad?

Murshidabad has a long tradition of khejur gur production. The winter climate, local know-how and generations of tapping and cooking experience make the district closely associated with Bengal's date palm jaggery culture.

That is why we chose to build our operations here and work closely with the people who know the process best.

How khejur becomes gur

Here is what happens during the winter tapping season, typically from November to February.

1. The cut

Just before sunset, a traditional khejur tapper, or shiuli, climbs the date palm with a small curved knife and a collection pot. A shallow cut is prepared in the trunk and a spout guides the sap into the pot below.

2. The overnight collection

Through the cool winter night, sap drips into the pot. The fresh sap collected overnight is highly perishable, which is why careful handling and quick processing matter.

3. The dawn collection

Before sunrise, the pots are brought down and the sap is moved promptly to the boiling station. Fresh sap can begin fermenting if it is left standing for too long.

4. The slow cook

The sap is reduced in a wide, shallow iron kadhai over heat. As water evaporates, the sugars concentrate and the colour deepens from pale amber to rich brown. The cook monitors the reduction continuously until the desired consistency is reached.

5. The pour

The finished jaggery can then be set to crystallise for powder, poured into moulds for block Patali Gur, or packed in liquid form as Nolen Gur, depending on the product.

We do not use sulphur treatment in our process and do not add preservatives to our Date Palm Jaggery. Independent laboratory testing provides additional information on selected quality, safety and nutritional parameters.

Closer control from sap to pack

Our approach is to stay close to the process rather than treat jaggery as an anonymous commodity. Our team works directly with tapping, cooking, quality checks and packing so there is clearer traceability and greater control over what goes into the final product.

What we look for

Jaggery is an agricultural product, so some natural variation between batches is expected. Our quality checks focus on the characteristics that matter most to the finished product, including:

  • Clean flavour — avoiding burnt, fermented or otherwise off notes.
  • Proper reduction and crystallisation — so the product has the intended texture and handling characteristics.
  • Process control — including our no-sulphur-treatment and no-added-preservatives process.
  • Independent testing — laboratory analysis of selected nutritional, quality and safety parameters.

The seasonal truth

Date palm sap is harvested during the cooler winter months. Fresh khejur gur is therefore inherently seasonal.

Our powder and sachets are produced from winter-season date palm sap and packed for year-round sale. Our block jaggery and liquid Nolen Gur are seasonal products linked more closely to the fresh winter harvest.
